Ingredient Costs
Cost: Weighted Inventory Average
An ingredient's Cost is a weighted average. When a received batch is added to on-hand inventory, the system combines the value of the existing inventory with the total cost of the received batch, then divides by the combined quantity. For batches in quarantine, the average updates when the batch is released into inventory.
New average cost per unit = ((previous average cost per unit × quantity on hand) + total received batch cost) ÷ (quantity on hand + quantity received)
For example, 300 KG at $1.00 per KG has a value of $300.00. Adding 600 KG with a total batch cost of $100.00 gives 900 KG valued at $400.00. The new average is $400.00 ÷ 900 KG, or approximately $0.444444 per KG.
See the weighted average calculation for a step-by-step breakdown.
Current Cost: Your Separate Pricing Reference
Current Cost is based on the vendor pricing you enter and select in the ingredient's Vendor Pricing tab. It is separate from the weighted inventory average, so you can track and use a cost that is not averaged each time inventory is received. Ingredient and quote pages reference this separate value as Current Cost.
To review or update it, select the ingredient, choose View/Edit, and open Vendor Pricing.
Ingredient Filters
The Ingredients grid includes additional filtering for restrictions and allergens. Use these filters with the Status dropdown and grid search to narrow the list before opening an ingredient.
The allergen list is placed near the front of the ingredient details so important allergen information is easier to review.
Ingredient Tabs
Files
Add files to an ingredient from the Files tab at the bottom of the window. Drag files into the files section or upload them using the Upload File button on the far right. Successfully added files appear in the list. To include a file when creating and emailing a purchase order, select the email checkbox.
Restrictions
Add restrictions from the Restrictions tab at the bottom of the window. Click available restrictions to select them. A check mark indicates a selected restriction. Selected restrictions display when printing a batch sticker or printing an order cover sheet.
Vendor Qualification
Add vendor qualifications from the Vendor Qualifications tab. If the ingredient requires vendor qualification, select Yes under the Needs Vendor Qualification dropdown. Linked ingredients are counted as one ingredient by the Vendor Qualification system.
Vendor Pricing
Use the Vendor Pricing tab to enter and record vendor and vendor tier pricing for components or ingredients. This can be helpful when creating purchase orders.
If two of the same ingredients are ordered from the same vendor but need to be separated for inventory purposes, they can be linked in the Vendor Qualifications tab.
